Fig and Ricotta Toast

INGREDIENTS

  • 1/2 cup old fashioned oats
  • 1 pinch sea salt
  • 1/2 cup yogurt, of choice
  • 1/3 cup frozen blueberries
  • 1 tablespoon peanut butter

METHOD

  • STEP 1

    Bring 1 cup water to a boil in a small pot. Reduce to a simmer and stir in the oats and salt. Cook until water is absorbed and oats are soft, 4-5 minutes.

  • STEP 2

    Remove from heat, then stir in yogurt, blueberries, and peanut butter.
