  • 250g (9 oz) beef sirloin or tenderloin, thinly sliced
  • 1 tablespoon olive oil or butter
  • 1/2 onion, finely chopped
  • 1 garlic clove, minced
  • 100g (3.5 oz) mushrooms, sliced (button or cremini)
  • 1 tablespoon all-purpose flour
  • 1/2 cup beef broth (or stock)
  • 1 teaspoon Dijon mustard (optional)
  • 1/2 cup sour cream
  • Salt and pepper, to taste
  • Chopped fresh parsley (for garnish)

For the Creamy Mashed Potatoes:

  • 2 large potatoes (about 400g), peeled and chopped
  • 2 tablespoons butter
  • 1/4 cup whole milk or heavy cream (warm)
  • Salt, to taste

🍳 Instructions

1. Prepare the Mashed Potatoes:

  1. Place chopped potatoes in a pot and cover with cold water. Add a pinch of salt.
  2. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until fork-tender.
  3. Drain the potatoes, then mash with butter and warm milk (or cream) until smooth.
  4. Season with salt to taste and keep warm.

2. Cook the Beef Stroganoff:

  1. In a large skillet, heat oil or butter over medium-high heat.
  2. Add the sliced beef and sear quickly (1–2 minutes per side) until just browned. Remove from the pan and set aside.
  3. In the same pan, add a bit more oil if needed. Sauté the onions for 2–3 minutes until soft, then add garlic and mushrooms. Cook for another 5 minutes until mushrooms are browned.
  4. Sprinkle the flour over the mixture and stir well to coat evenly.
  5. Pour in the beef broth and stir, scraping up any browned bits from the bottom. Bring to a simmer.
  6. Stir in Dijon mustard (if using), then lower the heat and mix in the sour cream. Stir gently until smooth and creamy.
  7. Return the beef to the skillet and simmer for 2–3 more minutes until the sauce thickens and beef is just cooked through.
  8. Season with salt and pepper to taste.

3. Serve:

  1. Scoop mashed potatoes onto plates.
  2. Spoon the beef stroganoff over the top.
  3. Garnish with chopped parsley.
  4. Serve hot and enjoy!

  • For extra calories, add a dollop of butter on top of the mashed potatoes before serving.
