1. Prepare the Mashed Potatoes:
- Place chopped potatoes in a pot and cover with cold water. Add a pinch of salt.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until fork-tender.
- Drain the potatoes, then mash with butter and warm milk (or cream) until smooth.
- Season with salt to taste and keep warm.
2. Cook the Beef Stroganoff:
- In a large skillet, heat oil or butter over medium-high heat.
- Add the sliced beef and sear quickly (1–2 minutes per side) until just browned. Remove from the pan and set aside.
- In the same pan, add a bit more oil if needed. Sauté the onions for 2–3 minutes until soft, then add garlic and mushrooms. Cook for another 5 minutes until mushrooms are browned.
- Sprinkle the flour over the mixture and stir well to coat evenly.
