🛒 Ingredients:
- 1 bunch fresh kale (about 4 cups, chopped and stems removed)
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice (freshly squeezed)
- 1 tsp sesame oil
- 1 tsp sesame seeds (toasted)
- Salt to taste
- Optional: A pinch of chili flakes or crushed garlic for added flavor
👩🍳 Instructions:
- Wash & Prep Kale
Rinse the kale thoroughly and remove the tough stems. Tear or chop into bite-sized pieces. - Steam the Kale
Bring a pot of water to a boil and place a steaming basket over it. Add kale, cover, and steam for 4–5 minutes, or until just wilted but still vibrant green. - Make the Dressing
In a small bowl, mix the olive oil, lemon juice, and sesame oil. Add salt to taste. - Toss & Combine
Remove the steamed kale and place it in a large bowl. Pour the dressing over and toss gently to coat evenly. - Garnish & Serve
Sprinkle with toasted sesame seeds and optionally add chili flakes or garlic. Serve warm or at room temperature.
💡 Tips & Notes:
- Don’t Oversteam: Overcooking kale can make it bitter and reduce nutrient content — keep the color bright green.
- Sesame Seeds: Toasting enhances the nutty flavor. Just dry roast in a pan for 2–3 minutes until golden.
- Supports Estrogen Balance: Cruciferous vegetables like kale help metabolize excess estrogen — beneficial for reducing PMS symptoms.
- Meal Prep Friendly: Keeps well in the fridge for up to 2 days. Reheat gently or enjoy cold.
