BBQ Pulled Pork Sandwich

🛒 Ingredients

For the Pulled Pork:

  • 300g (10.5 oz) pork shoulder or pork butt, boneless
  • 1 tablespoon olive oil
  • 1/2 onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 cup BBQ sauce (store-bought or homemade)
  • 1/4 cup chicken broth (or water)
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

For the Coleslaw:

  • 1 cup shredded cabbage (green or mixed)
  • 1/4 cup shredded carrot
  • 2 tablespoons mayonnaise
  • 1 teaspoon apple cider vinegar or lemon juice
  • Salt and pepper, to taste

For Serving:

  • 2 sandwich buns or burger rolls
  • Extra BBQ sauce (optional)
  • Butter (optional, for toasting buns)

🍳 Instructions

1. Cook the Pork:

Option A – Pressure Cooker or Instant Pot (Fastest):

  1. Season pork with salt, pepper, and smoked paprika.
  2. Heat oil in the pot, sear the pork on all sides (2–3 minutes).
  3. Add onions, garlic, BBQ sauce, and chicken broth.
  4. Cook on high pressure for 40 minutes. Natural release for 10 minutes.
  5. Remove the pork and shred with two forks. Return to sauce and mix well.

Option B – Stovetop (1–1.5 hours):

  1. Cut pork into smaller chunks. Season as above.
  2. Heat oil in a pot, sear pork. Add onion, garlic, BBQ sauce, and broth.
  3. Cover and simmer on low for 1 to 1.5 hours until very tender.
  4. Shred pork and return to sauce.

2. Prepare the Coleslaw:

  1. In a bowl, combine cabbage, carrot, mayo, and vinegar.
  2. Season with salt and pepper.
  3. Mix well and chill until ready to use.

3. Toast the Buns (optional):

  1. Lightly butter the inside of the buns and toast on a pan until golden brown.

4. Assemble the Sandwich:

  1. Place a generous amount of pulled pork on the bottom half of the bun.
  2. Add coleslaw on top.
  3. Drizzle with more BBQ sauce if desired.
  4. Top with the other half of the bun.

💡 Tips:

  • For even more calories, add a slice of cheddar cheese or top with fried onions.
  • You can prepare the pork a day in advance for deeper flavor.
  • Use brioche buns for a softer and richer sandwich.
