1. Prepare the Béchamel Sauce:
- In a small saucepan, melt 1 tablespoon of butter over medium heat.

- Gradually pour in the warm milk while whisking constantly until smooth and thickened.
- Season with salt, pepper, and a pinch of nutmeg if using. Set aside.
2. Assemble the Sandwich:
- Spread Dijon mustard on one or both slices of bread (optional).
- Layer with ham and cheese between the bread slices.
- Spread a thin layer of béchamel sauce on top of the sandwich.
- Sprinkle the grated cheese over the sauce.
3. Cook:
- Heat butter in a skillet over medium heat.
