🛒 Ingredients:

  • ½ cup raw almonds (chopped or roughly crushed)
  • 2 tbsp ground flaxseed
  • 1 tbsp chia seeds
  • 2 tbsp unsweetened shredded coconut (optional)
  • 2 tbsp almond butter
  • 1½ tbsp honey or maple syrup
  • ½ tsp vanilla extract
  • A pinch of sea salt

👩‍🍳 Instructions:

  1. Prepare Dry Mix
    In a large bowl, mix chopped almonds, ground flaxseed, chia seeds, shredded coconut (if using), and a pinch of sea salt.
  2. Heat Wet Ingredients
    In a small saucepan over low heat, combine almond butter, honey (or maple syrup), and vanilla extract. Stir constantly until smooth and slightly runny—about 2–3 minutes. Do not boil.
  3. Combine & Mix
    Pour the warm wet mixture over the dry ingredients. Stir thoroughly until all components are well-coated.
  4. Shape the Bars
    Line a small dish or container (roughly 5×5 inches) with parchment paper. Press the mixture firmly into the dish to form an even, compact layer. Use the back of a spoon to smooth the top.
  5. Chill to Set
    Refrigerate for at least 1 hour, or until firm. Once set, lift from the container and cut into 2 bars (or more if you prefer smaller portions).
  6. Serve or Store
    Enjoy immediately, or store in an airtight container in the fridge for up to 1 week.
